Chorizo Grilled Cheese

A twist on a classic grilled cheese using frozen, grated Spanish chorizo, a protective layer of provolone to keep the filling together, and a touch of honey for sweetness.

  1. Grate the sharp cheddar cheese.

  2. Freeze the Spanish chorizo and then grate it.

  3. Roughly chop the cilantro and toss with the grated cheddar and chorizo to create the filling.

  4. Butter the griddle and start heating to a low temperature.

  5. Assemble the sandwich by placing a protective layer of provolone on the bread to prevent the cheddar from melting and absorbing into the bread holes.

  6. Add the chorizo-cheddar-cilantro mixture.

  7. Spread a small amount of honey onto the sandwich.

  8. Cook on the griddle using a mortaring trowel to apply light pressure to keep the sandwich flat.

  9. Flip once the bottom is golden brown and cook until the cheese is melted and the bread is toasted on both sides.
