  1. Preheat a cast iron skillet or griddle over high heat until smoking hot.

  2. Place the beef balls onto the hot surface, spacing them apart.

  3. Using a heavy spatula, press down firmly on each beef ball to smash it into a thin patty.

  4. Season liberally with salt and pepper.

  5. Once a deep brown crust has formed on the bottom, flip the patties.

  6. Immediately top with a slice of American cheese and cook until melted.

  7. Toast the buns lightly in the skillet or a separate pan.

  8. Assemble the burgers on the toasted buns.
