  1. Crack three eggs into a bowl.

  2. Add a pinch of salt to the eggs and whisk them thoroughly.

  3. Heat a pan over medium-high heat and add a knob of butter.

  4. Once the butter is foaming, pour in the eggs.

  5. Cook while stirring constantly with a spatula until the eggs form soft curds.

  6. Remove from heat when slightly undercooked to finish with residual heat, then serve immediately.
