A classic Southern Italian-style fried zucchini dish that becomes flavorful, rich, and slightly creamy when fried in olive oil and finished with mint, garlic, and vinegar.

  1. Heat a generous amount of extra-virgin olive oil in a pan over high heat.

  2. Slice the zucchini into rounds approximately 1/3-inch thick.

  3. Deep fry the zucchini slices in the hot oil until golden brown on both sides.

  4. Remove the zucchini slices from the pan and drain on paper towels to remove excess oil.

  5. Season the fried zucchini with salt, pepper, and a pinch of MSG.

  6. While the zucchini is still hot, add the minced garlic and hand-torn mint leaves.

  7. Add a splash of vinegar and toss everything together.

  8. Serve warm or at room temperature.
