  1. Keep the root end intact while trimming the stem end.

  2. Peel the shallot.

  3. To mince: lay the shallot flat on the cutting board. Make a series of vertical slices, angling the knife slightly toward the center as you go around to create even pieces. Then, cut across the slices.

  4. To slice/ring: cut the shallot crosswise (orbitally) for ring-like pieces, or slice pole-to-pole for slivers.
