A classic Italian sub built with layered meats, provolone, and a zesty, vinegar-dressed salad of bitter greens and onions.

  1. Thinly slice iceberg lettuce, radicchio, and red onion. Place in a bowl.

  2. Dress the greens and onions with salt, pepper, red wine vinegar, and olive oil.

  3. Split the sub roll open and scoop out some of the inside bread.

  4. Drizzle olive oil on the inside of the bread.

  5. Layer the provolone cheese, spicy calabrese sausage, Genoa salami, and mortadella on the bread, layering for full coverage.

  6. Add the seasoned salad mixture onto the meats.

  7. Add tomatoes and pickled hot peppers.

  8. Close the sandwich and compress it down.

  9. Wrap the sandwich tightly and let it sit for about 5 minutes to let ingredients marinate and mingle.
