  1. Divide ground beef into loosely packed balls.

  2. Preheat a cast iron skillet or griddle over high heat until very hot.

  3. Toast the buns in the pan with a little bit of fat until golden brown.

  4. Place the beef balls into the hot pan and smash them down firmly with a heavy spatula or press to create a thin, wide patty.

  5. Season the patties generously with salt and pepper.

  6. Once the bottom has developed a deep, dark brown crust, flip the burger.

  7. Immediately place a slice of American cheese on the patty and let it melt.

  8. Remove the burger from the pan and assemble on the toasted bun with your preferred condiments.
