A flavorful Thai-inspired steak salad made using leftover steak, fresh herbs, and homemade toasted rice powder.

  1. Toast the rice in a dry pan over medium heat until it becomes golden brown, tossing occasionally.

  2. Grind the toasted rice into a fine powder using a mortar and pestle.

  3. Thinly slice the cold leftover steak against the grain.

  4. Prepare the vegetables: slice the cucumber, romaine lettuce, shallots, and peppers (if using).

  5. Prepare herbs by pulling cilantro and basil leaves.

  6. Whisk together the dressing ingredients: lime juice, sugar, fish sauce, and chili flakes.

  7. Combine the sliced steak, vegetables, herbs, and toasted rice powder in a bowl.

  8. Dress the salad and toss well. Taste and adjust seasonings if necessary, adding more fish sauce, chili, or rice powder to taste.

  9. Garnish with extra herbs and chili before serving.
