Zucchini Pizza Sandwich

A quick, high-heat flatbread sandwich stuffed with charred, caramelized zucchini, melted provolone, and fresh herbs.

  1. Preheat a cast iron pan in a very hot oven.

  2. Slice the zucchini.

  3. Heat olive oil in the preheated pan and add the zucchini slices.

  4. Season the zucchini with salt, pepper, oregano, and minced or sliced garlic.

  5. Cook until the zucchini is nicely browned and caramelized.

  6. Stretch the pizza dough into a 12-inch circle.

  7. Brush the surface of the dough with olive oil.

  8. Fold the dough circle in half and rub with a little oil to prevent sticking.

  9. Place the folded dough in the hot oven and bake until puffy and charred, about 2 minutes.

  10. Remove the bread from the oven and split it open.

  11. Stuff the warm bread with the cooked zucchini and top with provolone cheese.

  12. Finish with a squeeze of fresh lemon juice and fresh basil leaves.
